Banana Bread


This moist Banana Bread Recipe is loaded with ripe bananas, tangy-sweet raisins (soaked in rum since April this year), and toasted walnuts. I love the aroma in my kitchen. The original recipe does not call for soaked raisins. You can try this recipe without soaked raisins and I am sure it will taste just as nice. I wanted to finish a batch of soaked raisins and I thought I would add some oomph to the bread!

Collect it:


• 3 very ripe bananas (medium/large)

• 113.5 gms salted butter at room temperature

• 150 gms granulated sugar

• 2 large eggs lightly beaten

• 187.5 gms all-purpose flour / Maida

• 1 tsp baking soda

• ½ tsp vanilla extract

• 117 gms walnuts

• 72.5 gms soaked raisins





Notes: 
+ Do not use extra flour to coat the raisins  and walnuts. Use from the 187.5 gms. Extra flour will make the bread dense! 
+ You can make this bread without soaked raisins. Chop the raisins and add to the mix. I would still coat the raisins and walnuts with flour. It is something I learnt at baking classes and something I follow religiously. The fruit will never ever sink!




Make it:


Preheat the oven to 170°C. Grease and flour a bread loaf pan (9.25 long x 5.25 wide x 2.75 deep).


Lightly roast walnuts in a pan, continuously stirring to keep them from burning. Cool them to room temperature. Chop them and set aside.


In a mixing bowl, cream together softened butter and sugar.


Mash bananas with a fork until chunky and add them to the batter along with eggs. Mix until blended.


In another bowl, add soaked raisins (after squeezing off excess liquid) and a little flour. Coat the raisins with flour. This will keep the raisins from sinking. Similarly coat the walnuts with a little flour. Set aside.


In a separate bowl, whisk together the remaining flour and baking soda. Add to batter.

Add vanilla extract and mix in chopped walnuts and raisins.


Pour into prepared loaf pan. Bake at 170˚C for 55-60 min or until a toothpick inserted into the center comes out clean.


Let banana bread rest for 10 min before transferring to a wire rack to cool. Enjoy!
