Bhujne
Bhujne is one of Goa’s lost recipes. It is a semi-gravy recipe but you can have it dry as well.

Collect it:
• 3 Medium Potatoes (Cube or sliced
with skin)
• 2 large onion (Sliced or chopped)
• 3-4 large green chilies
• 1 ½ tablespoon oil
• 2 sprigs of coriander leaves finely
chopped
• 4-5 kokum petals
• ¾ cup water (more if required)
Spice Masala
• ½ tsp cumin powder
• ¼ tsp turmeric powder
• ½ tsp coriander powder
• ¼ tsp red chillie powder
• Pinch of sugar
• Salt as per taste
Make it:
Wash, clean and cut the potatoes and onions.
In a bowl mix all the ingredients mentioned under: Spice Masala. Marinate the potatoes with this spices and set aside for 10 minutes.
Mix the onions and green chillies well. Add onions-chillies-potato to a pan along with oil and water.
Cover and cook till potatoes are 70 % done. Add kokum petals and cook till the potatoes are done. Sprinkle chopped coriander leaves.
