Carrot Ginger Soup
I am not too fond of soups except Manchow!!! Some weeks ago, I tried this Carrot ginger soup which was delicious. This comforting soup is vegan and super delish.
3 carrots (I used the orange ones)
1 tbsp ginger, chopped
60 grams onion, chopped
2 cups water, or as required
salt to taste
¼ teaspoon crushed black pepper, or as required
1 tsp olive oil
2 toasted walnuts for garnish
Rinse, peel and chop the carrots, onions and ginger.
Heat oil in the pressure cooker. Add the chopped onions. Sauté till the onions turn translucent.
Add the chopped ginger and sauté till the rawness goes away. Add the chopped carrots.
Season with salt according to taste. Add a cup of water. Pressure cook till soft. I needed 3 whistles.
Once cool, add everything in a grinder or blender jar. Add ½ cup water and grind or blend to a smooth puree.
Take all pureed carrot mixture in the same pan. Add 1 cup water and mix very well. Add less water if you want a thicker consistency. When the soup comes to a boil, then add some crushed black pepper. Mix.
Pour in soup bowls. Garnish carrot ginger soup with a dash of oil and toasted walnuts.
