Chicken Chilly Pepper Fry
A peppery, spicy chicken, easy and quick to prepare. This recipe uses no oil.
• 500 gms boneless chicken, cut into
small thin pieces
• 2 green chillies, slit
• 5 garlic cloves, minced
• 1 inch ginger, minced
• 2 tblsp dark soy sauce
• 1/4 tsp turmeric powder
• 1 tbsp lemon juice
• 1 onions, sliced fine
• Salt to taste
Pepper Masala to be roasted dry and ground to a fine paste (without water)
• 1 tblsp peppercorns
• 1/8 cup curry leaves
• 1 inch cinnamon sticks
• 5 cloves
• 1/2 tsp cumin seeds
Apply turmeric, salt, pepper masala and lemon juice and set it aside for 30 minutes. In a wok / pan place the chicken. Cover and cook on medium flame till the meat releases juices and the meat turns tender.
Sauté the meat till the juices evaporate. Then stir fry till the meat pieces are well fried. Drain and keep the pieces aside.
In the same wok / pan, add onions, green chillies, ginger and garlic. Sauté till the onion turn translucent and ginger garlic is cooked.
Add soy sauce and stir fry for a few seconds.
Add the fried chicken and sauté well for five minutes. Serve hot!
