Ditz Roast Beef

This is a recipe from my grandfather’s sister, Pauline Mai, who was a great cook. I have tweaked this recipe to what it is now and used it several times. It is packed with flavour and simple to make.
Collect it:
• 1 Kg beef, cut into slices, not too thick, not too thin
• 4 onions sliced
Masala for marination
• 1 tsp turmeric
• 1 tsp red chillie powder
• 1/2 tsp pepper powder
• 3 pieces of cinnamon (the size of a red chillie)
• 7 cloves
• 11-12 pepper corns
• 6 big Kashmiri chillies
• 3 sour limes
• 1 1/2 tbsp garlic ginger paste
• 1 tsp soy sauce
• 6 green chillies smashed
• 1 tsp tempero cheiroso (optional)
• A dash of feni / rum
• salt to taste
Make it:
Marinate all the above, preferably overnight. I marinate the meat for as long as seven days. The minimum time is two hours.
Slice 4 onions finely and fry them till brown
Add the meat
ADD NO WATER
Cook for 1 whistle + 20 minutes on slow gas
