Dulce de leche kulfi
An amazing desert
'Dulce de leche' may sound exotic and at the same time intimidating.
Dulce de leche is simply ‘Cooked’ condensed milk. It is a bit tricky recipe but very, very addictive. You can try your own variation of it. Whatever your variation, make sure you walk an hour before and after you have eaten this.
(It should look something like this)
180 ml dulce de leche (made with 2 tins of milk maid or mithai maid)
250 ml milk
250 ml fresh cream
250 gms finely chopped cashew nuts
DULCE DE LECHE: You could make this on the gas but takes 8 hours or in the oven but it takes about an hour and a half. Both the gas and oven method is time-consuming. The microwave seemed the best option. A word of caution: LOTS OF PATIENCE, a pair of gloves is an absolute must.
Pour the contents of condensed milk can into a deep microwave proof bowl. Microwave on medium power for 2 minutes. Stir. Continue to microwave and stir till the condensed milk becomes thick and caramel coloured. In the microwave I use, I burnt the first lot. Never the one to give up, I tried again. Takes about 8 minutes in all
MIX: In a mixer, combine Dulce de leche and fresh cream. Pour in a bowl, gently stir in the milk and the cashew nuts. Pour in a container or moulds and freeze it, preferably overnight.
