Goan Beef Tamreal
This is a Goan Beef curry. In some parts of Goa it is called Tamreal. This is an Alves Fernandes recipe and it is delicious.
• 1 kg beef (bone-in or boneless)
• 2 ½ teaspoon ginger and garlic paste
• ¾ large lime (juice)
• Salt to taste
• Small ball of tamarind (in luke warm water)
• 2 medium size onions, chopped
• 2 large potatoes, cubed
• 2 slit green chillies
• 1 green chillie, chopped
• 1 large tomato, chopped
• 2 sprigs of curry leaves
• 1 tablespoon vinegar
• 2 ½ tablespoon oil
• Salt to taste
• Pinch of sugar
• Water as required
Masala to grind:
• 9-11 Kashmiri chillies
• 8 cloves of garlic
• 1 inch ginger
• 1 ½ inch cinnamon sticks
• 1 teaspoon cumin seeds
• 8-9 cloves
• 25-28 peppercorns
• ¾ tsp turmeric
• 3 tbsp vinegar
• 1 ½ tbsp water
Clean, wash and marinate the meat with ginger and garlic paste, lime and salt for a minimum of 30 minutes, maximum of 2 hours.
Add this to a pressure cooker with little water and let it cook for 3-4 whistles depending on the size of the meat cubes. Reserve the stock to be used in the process.
Grind to a fine paste the masala listed under ‘Masala to grind’
In a pot add oil and sauté the chopped onions and chillie till the onion turns translucent. Add the tomatoes and cook till they turn mush. To this add the potato cubes and same water (90ml). Cover and cook for 2 minutes.
Now add the ground masala. Add little water to the grinder to remove the masala in the mixer jar and add to the pot.
Mix well and let it cook for 3 minutes. Now add the meat to the pot and give it a good mix. Add reserve stock, tamarind water (60ml), curry leaves.
Cover and let it cook for 5 minutes. Add vinegar, sugar and slit chillies. Check salt to taste. Adjust the consistency of the curry as you prefer.
Once the potatoes are cooked your Beef Tamreal is ready.
