1 packet of Maggie noodles, flavor of your choice. I used chicken
50 gms carrot, finely diced
50 gms green capsicum, finely diced
50 gms red capsicum, finely diced
50 gms yellow capsicum, finely diced
50 gms French beans, finely diced
2 small chicken cocktail sausage (optional)
2 tbsps oil
2 onions, finely chopped
1 green chillie (small)
A dash of turmeric
Salt to taste
HEAT 1 tbsp oil. SAUTÉ carrots, capsicum (red, yellow, green), French beans for 5 minutes. I like the crunch on the vegetables so didn’t cook it long. Add sausage. Add a dash of salt. Fry lightly set aside. COOK Maggie noodles with little water. Ensure that it is not mush. Add the masala maker in the packet. Add salt. Add veggies and sausage. Set aside.
BREAK two eggs, beat it well. Add onions, chillie and turmeric. Salt to taste (use less because you have already added salt to the vegetables)
HEAT a pan and make pour the egg mixture. Cook on low flame. Cook till done.
LAYER THE NOODLES on one half of the egg. Fold over the remaining half of the egg. Cook for 2 minutes. Serve hot with ketchup. Enjoy
