Prawns in Oyster Sauce
450 gms prawns
1 white of an egg
½ tsp ground black pepper
1 tsp salt
1 tbsp cornflour
MIX all the above ingredients in a bowl.
Marinate for ¾ hours before cooking.
1 cup green spring onions + shoots
3 green chillies
1 small red capsicum (cut in strips)
1 tbsp garlic (finely chopped)
1 tbsp ginger (finely chopped)
2 tbsps oyster sauce
1 tbsp dark soy sauce
2 tsp sugar
1/2 tsp black pepper (coarsely ground)
2 tsp red chillie flakes
½ cup water
MIX all the above ingredients in water. Keep ready.
HEAT a pan/wok. Add 1 or 2 oil. Sauté garlic, ginger and green chillies. Add spring onions and capsicum. Add the marinated prawns. Gently mix for a minute or two.
ADD the sauce mixture. Mix for a minute.
If you need to thicken it, dilute ¼ tsp cornflour in water and add. I didn’t use this.
