Rocky Road Bar

This is my version of the Neapolitan Rocky Road Bar … Feel free to try your own version.

Collect it:

  1. 200 gms pistachio

  2. 200 gms broken cashews

  3. 200 gms almonds, chopped into medium size pieces

  4. 300 gms marshmallow (Pink and white in colour. Though you could use any other colour)

  5. 750 gms bitter chocolate

  6. a dash of salt

Make it:

Cut the marshmallow into small bits. Cut the nuts and set aside. I didn’t cut the pistachio.  Melt bitter chocolate for 30 seconds in a microwave. Do it in bursts of 30 seconds so that the chocolate does not burn. Check if the chocolate has melted. Melt again for another 30 seconds, if needed. If you are not confident using the microwave, double boil the chocolate. Take a large vessel with water and turn on the heat.  In a small vessel, put the chocolate and place this into the bigger vessel. It helps to cut the chocolate fine. If you use this method, please ensure that no water enters the chocolate. You should not use a lid for this. 

Once the chocolate is melted, add salt (this enhances the flavour) combine the marshmallows, nuts and chocolates. Set aside a few nuts to sprinkle later.

Line a baking tin or plate with butter paper. Spread the mixture making sure you have a thin, even layer. Sprinkle the remaining nuts. 

Cool for 20 mins in the fridge. After it has set, cut into small squares. If you have no patience, you can break it into pieces. Because of the chewy marshmallows, it is easier and neater to just cut it. Trust me you cannot stop eating this ….
