Spicy Beer Prawns

Some weeks ago I made beer bread and had a can of beer sitting around. For some reason, I wanted to do something with beer but not beer bread again. I had a few prawns so Beer prawns it was with a little a bit of this and a bit of that. Feel free to adjust the spice quotient.

Collect it:

Dry Rub Powder

• 1/4 tsp brown sugar

• 1/2 tsp red chillie powder

• 1/2 tsp pepper powder

• 1/2 tsp jeerem mereem powder

• Salt to Taste

Rest of the Ingredients

• 100 grams prawns, peeled, deveined

• 1 tbsp olive oil

• 1 clove garlic, minced

• 1/4 tomato, finely sliced

• 1 spring onion bulb, finely chopped

+ leaves finely chopped for garnish

• 1 cup (250 ml) mild beer

Make it:

Dry the prawns with paper towels and season with dry rub. Set aside.

Heat up a pan on high heat, add the olive oil. Sauté the garlic until aromatic. Do not burn. Add onion, fry till translucent. Add tomato and shrimp. Stir to combine well. As soon as the color of the shrimp turns opaque, add the beer. Taste and adjust seasoning.

Bring the beer to a quick boil and when the shrimp is cooked through, turn off the heat and add the leaves of spring onion. Stir to combine well and serve immediately.
